Galley Cleaning Instructions

Galley hygiene is of utmost importance for the health and wellbeing of crew members. A clean and hygienic galley reduces the risk of foodborne illnesses, which can have serious consequences for crew members at sea.

Additionally, a well-maintained galley promotes a safe and healthy work environment, which can improve overall morale and productivity. Good hygiene practices also help prevent the spread of infectious diseases, ensuring that all crew members remain healthy and able to perform their duties effectively. Most importantly, consider how a clean and tidy galley can inspire confidence in the crew, that the galley team is doing everything in their power to provide nutritious and safe food, made with care.

Instructions for galley hygiene maintenance:

  1. Clean as you go: Ensure that the cooking and prep areas are cleaned after each use to prevent the buildup of grease and food residue. Make sure floors are sweeped several times a day.

  2. Use appropriate cleaning products: Use designated cleaning products for different surfaces and materials in the galley to avoid damage and promote hygiene.

  3. Store food properly: Store food in designated containers with lids and in appropriate temperatures to prevent contamination and spoilage.

  4. Regular deep cleaning: Schedule regular deep cleaning sessions to thoroughly clean and sanitize the entire galley, including the walls, floors, and surfaces.

  5. Maintain hygiene standards: Ensure that personal hygiene is maintained at all times, including washing hands regularly, wearing clean clothing and hairnets, and avoiding sneezing or coughing over food.

Example for a Weekly Cleaning Schedule

Note:  It’s required to develop a weekly cleaning schedule to ensure consistent hygiene standards are met. Here is an Example for a Weekly Cleaning Schedule

Monday:
• Deep clean ovens, stoves, and grills
• Mop floor
• Clean countertops, sink, and other surfaces

Tuesday:
• Clean refrigerator and freezer
• Clean and sanitize utensils and cutting boards
• Clean and organize storage areas

Wednesday:
• Clean stove hood and filters
• Clean microwave
• Clean and organize pantry and spice racks

Thursday:
• Clean windows and other glass surfaces
• Dust and clean light fixtures
• Sweep and mop floor

Friday:

• Check and replace any cleaning supplies as needed

This schedule is just an example and may need to be adjusted based on the specific needs and demands of each vessel’s galley. The most important thing is to maintain a consistent cleaning schedule and adhere to good hygiene practices at all times.
