  1. In a bowl, thoroughly combine the minced mutton with parsley, onion, salt, pepper, cumin, and coriander.

  2. Cut each pita bread in half to create pockets.

  3. Fill each pita pocket with the seasoned meat mixture.

  4. Press the filled pitas firmly to compact the filling.

  5. Brush both sides with olive oil.

  6. Heat a grill pan over medium-high heat.

     

  7. Place the stuffed pitas on the pan, starting with the open side down, and grill for 3 minutes.

     

  8. Flip and grill for 2 minutes on each remaining side until crispy and the meat is fully cooked.

  9. Cut each half pita into two pieces and serve immediately.
