Chinese Pineapple Chicken

Instructions
- In a bowl, mix the chicken with soy sauce, sesame oil, salt, and cornflour. Let it marinate for 10 minutes.
- Heat neutral oil in a pot and fry the chicken for about 2 minutes until golden on all sides. The chicken will finish cooking in the sauce later.
- In a wide pan or wok, heat 2 Tbsp neutral oil. Add pineapple, onion, garlic, chili, and ginger. Stir-fry for 3 minutes.
- Add the chicken, soy sauce, brown sugar, vinegar, fish sauce, and water. Bring to a boil and cook for 2 minutes.
- In a separate bowl, mix cornflour with cold water until smooth. Add to the pan, bring to a boil, and cook for 2–3 minutes until the sauce thickens and coats the ingredients. Ensure the chicken is fully cooked.
- The sauce should be light in color with a balanced sweet-sour taste. Adjust seasoning if necessary.
- Serve over white rice, topped with roasted peanuts or cashews, spring onions, and sesame seeds.

Tips
- Chicken breast can be used instead of thighs.
- For a vegetarian version, replace the chicken with tofu.
