Feijoada is Brazil’s national dish - a rich black bean stew that brings together an assortment of meats in a flavorful, slow-cooked harmony. Rooted in Portuguese culinary traditions and reinterpreted throughout Latin America, Feijoada captures the warmth and diversity of Brazilian cuisine. Traditionally shared among family and friends, it embodies togetherness and celebration. The dish combines pork and beef cuts, both fresh and smoked, simmered slowly with black beans and aromatics until thick, tender, and deeply satisfying.

  1. 1 Drain and rinse the soaked black beans. Place them in a large pot, cover with water, bring to a boil, and simmer for about 30 minutes until partially tender. Drain and set aside.
  2. 2 Heat a large heavy pot over medium-high heat. Brown the pork shoulder, smoked sausage, chorizo sausages, and bacon in batches. Remove and set aside.
  3. 3 In the same pot, sauté the chopped onion and minced garlic until softened.
  4. 4 Return the browned meats to the pot, add the partially cooked black beans, smoked ham, bay leaves, and enough water to cover all ingredients.
  5. 5 Bring to a boil, then reduce the heat to low. Cover and simmer gently for 2 to 3 hours, skimming impurities from the surface as needed.
  6. 6 Once the beans are tender and the meats are fully cooked, discard the bay leaves.
  7. 7 Season the stew to taste with salt and black pepper. Serve hot over cooked white rice, garnished with chopped cilantro and orange segments (if using).

Note

Tips

Use any available pork or beef cuts suitable for stewing, including salted meats or trotters.
Smoked meats enrich the flavor but can be replaced with fresh cuts when unavailable.
Prepare a day in advance for deeper flavor — Feijoada reheats exceptionally well.
Serve with sautéed greens or shredded cabbage for a complete meal.
Adjust seasoning carefully near the end, as smoked meats often add saltiness.
