Fermented Chili
Fermented chili is a flavor-packed condiment enjoyed in many cultures, offering a spicy, tangy depth that enhances a variety of dishes. The fermentation process not only intensifies the chili’s flavor but also creates beneficial probiotics, promoting gut health.
This versatile homemade chili paste can be used as a dipping sauce, a base for spicy condiments, or an addition to stir-fries, marinades, stews, and vinaigrettes.

Blend the Ingredients:
- In a blender or food processor, combine the chopped chilies, garlic, and salt.
- Pulse until a coarse paste forms.
Transfer to a Jar:
- Spoon the mixture into a clean, airtight 500ml jar, leaving at least 2.5 cm (1 inch) of headspace to allow for expansion during fermentation.
- Press the mixture down with a spoon or spatula to remove air pockets.
Fermentation Process:
- Cover the jar with a lid, but do not fully tighten—this allows gases to escape.
- Store at room temperature, away from direct sunlight, for 5-7 days.
- Check daily, releasing any built-up gas and giving the mixture a quick stir.
Finishing and Storage:
- Once the desired fermentation level is reached (tangy and slightly bubbly), seal the jar tightly and transfer it to the refrigerator to slow down fermentation.
- The flavor will continue to develop, and the chili paste can last several months in the fridge.

- Milder Version: Use a mix of mild and hot chilies for a balanced heat level.
- Extra Depth: Add a splash of vinegar after fermentation to enhance acidity.
- More Fermentation Power: If desired, mix in 1-2 tbsp of brine from another lacto-fermented vegetable (such as kimchi or sauerkraut) to boost fermentation.
- Texture Control: For a smoother sauce, blend the fermented paste after fermentation with a little water or vinegar.
