Garlic Confit

This simple yet transformative preparation turns ordinary garlic into silky, sweet, and mellow cloves that elevate any dish. The resulting flavored oil is equally precious, making this a zero-waste preparation that keeps on giving.

Instructions

  1. Separate garlic heads into individual cloves
  2. Place cloves in a small pot with salt and thyme
  3. Pour olive oil to cover garlic by 0.5cm, ensuring all cloves are submerged
  4. Cook on lowest possible heat for 60 minutes, maintaining very gentle bubbles
  5. If bubbling becomes aggressive, remove from heat for 2 minutes before returning
  6. After 1 hour, turn off heat
  7. Remove thyme and transfer contents to clean, dry jar

  • Store at room temperature (not refrigerated)
  • Can be made with unpeeled garlic cloves
  • Use the flavored oil to enhance any dish
