Instructions
- Separate garlic heads into individual cloves
- Place cloves in a small pot with salt and thyme
- Pour olive oil to cover garlic by 0.5cm, ensuring all cloves are submerged
- Cook on lowest possible heat for 60 minutes, maintaining very gentle bubbles
- If bubbling becomes aggressive, remove from heat for 2 minutes before returning
- After 1 hour, turn off heat
- Remove thyme and transfer contents to clean, dry jar
