Larb Gai – Thai Chicken Salad

- Prepare the roasted rice (optional): Place the rice in a dry pan over medium-high heat. Roast, stirring every 30 seconds, until golden brown. Let cool, then grind into a powder using a food processor or mortar and pestle.
- Heat a pan with oil over medium heat. Fry the chicken, gizzards, and hearts for 5–6 minutes until golden.
- Transfer the cooked meat to a serving bowl. Add the red onion, cilantro, mint, basil, green onions, fish sauce, lemon juice, and ground chili. Mix well.
- Serve warm or at room temperature. If using roasted rice, sprinkle a little over the top before serving.

- Serve over rice for a more filling meal.

- If not roasting rice, top with roasted sesame seeds or chopped roasted peanuts.
