Larb Gai – Thai Chicken Salad

This vibrant Thai salad delivers an explosion of flavors and textures, combining juicy, spicy-sour chicken with fresh herbs and a satisfying crunch. It’s light, refreshing, and packed with aromatic ingredients—perfect for a quick and flavorful meal!

  1. Prepare the roasted rice (optional): Place the rice in a dry pan over medium-high heat. Roast, stirring every 30 seconds, until golden brown. Let cool, then grind into a powder using a food processor or mortar and pestle.
  2. Heat a pan with oil over medium heat. Fry the chicken, gizzards, and hearts for 5–6 minutes until golden.
  3. Transfer the cooked meat to a serving bowl. Add the red onion, cilantro, mint, basil, green onions, fish sauce, lemon juice, and ground chili. Mix well.
  4. Serve warm or at room temperature. If using roasted rice, sprinkle a little over the top before serving.

Note

Tips

  • Serve over rice for a more filling meal.
  • Enjoy with crunchy lettuce leaves, using them as edible wraps - highly recommended.
  • If not roasting rice, top with roasted sesame seeds or chopped roasted peanuts.
