Solyanka

Solyanka, a beloved dish in Ukrainian and Russian cuisines, is a hearty and
tangy meat soup. With a medley of meats and pickles, Solyanka is a flavorful
and a comforting option that has stood the test of time. Any number of meats,
cooked, fresh or cured, can be used for this, as well as pickled foods like sauerkraut,
pickled cucumbers, olives and capers. If you are missing one of them, it's still
worth your while.
Due to its high salt and fat content, it is often considered a great hangover
cure…. This recipe brings the rich and robust taste of Ukrainian Solyanka
to your table.

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the mixed diced meats, smoked sausage, and ham. Sauté until browned, allowing the meats to develop rich flavors.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Stir in the tomato paste and cook for a few minutes until it darkens in color 2-3 minutes.
  4. Add the bay leaves, black peppercorns, paprika, and cayenne pepper. Stir to combine, allowing the spices to infuse their flavors.
  5. Pour the broth into the pot, bringing the mixture to a gentle simmer.
  6. Allow the soup to cook for 20-30 minutes, letting the flavors develop.
  7. Add the sliced dill pickles, capers and olives to the pot. Mix well, ensuring the flavors meld together.
  8. Taste the soup and adjust the seasoning if needed.
  9. Ladle the Solyanka into bowls, topping each serving with a dollop of sour cream and some fresh dill.
